I'm planning a really UPSCALE INDIAN CUISINE (V) FINE DINING restaurant in Chennai (India). I need some advises like:
If I have a restaurant with capacity of 60 seats at a given time, how many cooks do I need? how many waiters/servers do i need?

Open Question: Use of hair nets in food prep?
I work in a vey busy kitchen. Our head chef insists on hair nets over ALL body hair. He is obsessive about it, for example when the apprentice chef came to work in a tank top the sous chef made him put holes in the hair nets and slip one over each arm to prevent armpit hair falling in the food.

Heres the thing, we just hired this new kitchen hand of indian decent, he is very hirsute (spelling?) he actually has hair on the back of as well as the palms of his hands. He's a great worker but our chef is giving the poor guy merry hell about needing to 'shave' his hands. what is the protocol for hair nets, what hair has to be covered and what doesn't?

So i had the first interview with the store manager and it went awsome! and then a second interview with the regional manager and that went good as well, but he didnt give me a direct answer on hiring me. i was told he had to do some more interviews and would be calling people back. The waiter was not only rude in his attitude, but also insulting when I politely asked for more condiments like I usually do. He patted me on the back and asked if everything's okay and when I said it's fine, he "tsk tsk'd" to me which was the final straw before I spoke to the manager who ended up comping me for the meal. The waitor wouldn't apologize, though, nor did he admit accountability for his rudeness. I'm a regular there, so he may not have known that, but even if I weren't a regular, that's still no way to treat a customer. Would you go back to that restaurant after an incident like that?
